This is my go-to ramen lunch. It's easy to make, absolutely stuffed to the gills with flavor, and doesn't take a lot of time. There's very little veggie involved, so make sure to have a healthy dinner tonight. Serves 1.
1. Combine broth ingredients in a small pot. Bring to a simmer, do not fully boil.
2. Meanwhile, boil a pot of water and cook ramen to package directions.
3. When the noodles are nearly finished, add the green onion and fish to the simmering broth.
4. Strain the noodles and add to a large bowl. Pour the soup on top. Serve and eat piping hot!
* Substitute fish sauce or MSG
** Substitute 2 tsp rice wine and 3/4 tsp sugar
*** Substitute regular Kikkomon soy sauce is fine, although the flavor will be shallower
